Flourless Chocolate Cake


This weekend, I hosted a few friends over for a girls night. I know mercury is retrograde because everyone around me and myself included has been so stressed lately. So I thought it was appropriate to chow down on pizza, sip some wine and enjoy desserts. I’m still trying to avoid gluten in my diet, so I decided to put my new Kitchenaid mixer to use and make a flourless chocolate cake for my girls!






Flourless Chocolate Cake
  1. 8 oz of semi-sweet chocolate chips

  2. 1 stick of butter

  3. 6 eggs, separated

  4. 1/2 cup cocoa powder

  5. 1/2 teaspoon salt

  6. 1 teaspoon vanilla

  7. 1/3 cup kahlua

  8. 1 1/2 cup of sugar

  9. confectioners sugar for garnish
  1. Pre-heat oven to 275 degrees

  2. Spray 9 inch spring form pan with cooking spray.

  1. In a medium bowl, melt the chocolate chips and butter in the microwave, constantly stirring ever 30 seconds until smooth. Remove from the microwave and set to cool.
  2. Separate egg whites and yolks into two small bowls. Beat the egg white using a mixer until stiff peaks have formed. Gradually add sugar to egg whites while they continue to beat. While mixing, slowly add cocoa powder, salt, vanilla extract, and kahlua.
  3. Add the remaining yolks to melted chocolate mixture and stir. Slowly fold egg mixture into chocolate mixture. Blend until just combined.
  4. Pour batter into prepared pan.
  5. Bake in the center of the preheated oven for about 50 minutes or until the sides begin to pull in. It's okay if the cake has fallen in the middle. Remove and cool in the pan on a bakers rack. Remove the sides of the pan and dust with powdered sugar. Slice and serve with Whipped Cream and Berries.
