Peanut Butter Chocolate Chip Banana Bread

Lately my bananas have been ripening before I can eat them. So I decided to make a batch of Peanut Butter Chocolate Chip Banana Bread from this recipe I found on Cooking Light. Now that I’m back on Weight Watchers, I’ve been trying to be more careful about what and when I eat. 


Peanut Butter Chocolate Chip Banana Bread
  1. 3 ripe mashed bananas
  2. 1/3 cup plain fat-free greek yogurt
  3. 1/3 cup creamy peanut butter
  4. 3 tablespoons butter, melted
  5. 2 large eggs
  6. 1/2 cup granulated sugar
  7. 1/2 cup packed brown sugar
  8. 1 1/2 cups all-purpose flour
  9. 3/4 teaspoon baking soda
  10. 1/2 teaspoon salt
  11. 1 tablespoon vanilla extract
  12. 1/2 teaspoon ground cinnamon
  13. 1/8 teaspoon ground nutmeg
  14. 1/3 cup chocolate chips
  15. 2 tablespoons chopped dry-roasted peanuts
  16. Cooking spray
  1. Preheat oven to 350°.

  2. Combine first five ingredients in a large bowl; beat with a mixer at medium speed.

  3. Add granulated and brown sugars; beat until blended.

  4. In a separate bowl, combine flour and next five ingredients.

  5. Add flour mixture to banana mixture; beat just until blended.

  6. Stir in nuts and chocolate chips.

  7. Pour batter into mini loaf pans coated with cooking spray.

  8. Bake at 350° for 30 to 40 minutes or until a wooden pick inserted in center comes out clean.

  9. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; cool.
