How to Make Almond Milk (From Scratch!)

Making homemade almond milk is so surprisingly simple that I may never buy another carton from the store again. I tested out the recipe for the first time last weekend. We all assume that almond milk is such a complex recipe but it actually only contains three ingredients: almonds, water, and sweetener. Homemade almond milk is incredibility nutty and creamy. Many of the store varieties are overly processed and contained added ingredients. Since being on Whole 30, I’ve found it challenging to find store varieties of almond milk that don’t contain additives or have a bunch of sugar in them. So that’s why I decided to try to make my own almond milk for the first time.

Homemade Almond Milk (From Scratch!)

Serving Size: Makes 2 cups

Ingredients

1 cup of raw organic blanched almonds (Trader Joe’s variety recommended)

2 cup water, additional 2 cups for soaking

3 pitted dates or vanilla bean

2 nut bags or cheese cloths

Directions

1. In a large bowl, soak almonds in water at room temperature overnight. The longer the almonds soak the creamier your almond milk will turn out.

2. After your almonds have soaked, drain and rinse them in cool water using your strainer.

3. Place almonds in your blender with 2 cups of water.

4. Blend on high for 5 minutes. The almond mixture should like white and milky.

5. Line your strainer and a bowl with the nut bag or cheese cloth. Pour the almond mixture into the bowl.

6. Press the liquid through the cloth into the bowl. You should have about 2 cups.

7. Rinse out your blender and add the almond milk back into the blender.

8. Add your dates or vanilla bean into the blender and blend for 2 minutes. This will lightly sweeten your almond milk.

9. Repeat step  6.

10. Refrigerate almond milk into a sealed container.

Happy National Hot Cocoa Day! One of my favorite wintertime drinks is hot chocolate. I love the richness of the drinking chocolate when paired with cookies fresh out of the oven. In honor of National Hot Chocolate Day, I am sharing my recipe for Creamy Dark Hot Chocolate. I decided to put a spin on the classic hot chocolate recipe by using real dark chocolate and coconut milk. The coconut milk adds a creamy touch. Ingredients
  1. 1 can of coconut milk
  2. 2 oz of semi-sweet dark chocolate
  3. 1/4 tsp vanilla extract
  4. 1/4 cup of sugar
  5. pinch of salt
  6. pinch of cinnamon
Instructions
  1. Heat coconut milk in a sauce pan over medium heat; don't let boil. Add cinnamon, sugar, and salt. Slowly whisk in dark chocolate and vanilla. Stir until chocolate has melted.
  2. Serve hot.

Raspberry Lemonade Beer Cocktail

Happy Cinco de Mayo! I hope you are planning to celebrate with friends. Tonight I am staying in but I’m looking forward to enjoying my slow cooker chicken fajitas. Cinco de Mayo wouldn’t be Cinco de Mayo without some delicious cocktails. Thanks to the team at Desperados Beer, I’ve created this refreshing cocktail recipe based on a recipe I found from Rachael RayDesperados Beer is a tequila barrel-aged lager. The lemonade gives the drink a feminine touch.

Raspberry Lemonade Beer Cocktail 

Ingredients

2 12 Bottles of Desperados Beer

1 frozen raspberry lemonade concentrate

3/4 cup vodka

1 lime, sliced

Instructions 
In a large pitcher, stir all ingredients together. Chill for 1 hour in the refrigerator and serve over ice.

Apple Cider Sangria

Yesterday I mentioned I threw a fall harvest themed party for a group of friends this weekend. One of the highlights of the evening was this recipe for apple cider sangria. I made the mistake of doubling the amount of alcohol in this drink which was good thing and a bad thing. So today I’m sharing the recipe for one pitcher instead of two. Apple Cider Sangria

Ingredients
  1. 1 bottle of pinot grigio
  2. 2 1/2 cups fresh apple cider
  3. 1 cup club soda
  4. 1/2 cup brandy
  5. 3 honey crisp apples, chopped
  6. 2 pears, chopped
  7. 2 oranges, sliced
  8. 1 lemon, sliced
  9. ΒΌ cup of honey
  10. 1 tablespoon of cinnamon
Instructions
  1. Place all ingredients into a large pitcher. Stir everything together. Chill in the refrigerator a few hours before serving. If you have time let it chill overnight.
  2. Enjoy!

The Dark & Stormy Cocktail

A few weeks ago, I discovered my new signature cocktail, the Dark & Stormy. It’s an old island favorite from Bermuda, made with ginger beer, rum, and a splash of lime juice. I created my own version of the drink by swapping out the ginger beer with ginger ale and adding a little agave nectar. The spicy and sweet combination of the rum and the ginger together make for the perfect evening cocktail.

The Dark & Stormy

Ingredients
  1. 4 oz of dark rum
  2. 1 lime, squeezed
  3. Ginger ale
  4. 1 tablespoon agave nectar
  5. 2 highball glasses
Instructions
  1. Add 2 oz of rum, lime, ginger ale, and agave nectar to each highball glasses. Stir together. Fill with ice and serve immediately. A garnish of lime is optional.
