Tomorrow morning I am headed to New Mexico for work for a few days. I hate that airlines don’t serve meals on domestic flights anymore so I’ve decided to pack a few snacks for the air. Browsing Pinterest, I found some great ideas for snacking while on the go. What’s your favorite food to snack on while your on the go?

When I heard Adele is planning to take a five year break, I literally screamed in my office. I LOVE, LOVE, LOVE Adele. She is so real and doesn’t have that I’m too good celebrity personality. This soulful songbird was recently photographed and interviewed by Vogue.

The editors at Vogue did a great job at showcasing her true beauty in this photoshoot. Adele looks like she stepped right out of a 16-century photo.

Will you still listen to Adele in five years? What are your thoughts on her break?

Homemade Peanut Butter Cups

Now that I’m on Weight Watchers, I have been avoiding sweets. But this week I had a craving for chocolate so, I decided to make peanut butter cups at home. The great thing about combining dark chocolate and peanut butter, is that I can still get all the nutrients I need in my diet without feeling guilty. Dark chocolate and peanut butter are both loaded with antioxidants.

Peanut Butter Cups

Recipe adapted from Joy of Baking

Ingredients

1 cup of creamy room temperature reduced fat peanut butter
1 tablespoon of unsalted butter
2 cups of chocolate chunks, dark chocolate
1 tablespoon of brown sugar
1 teaspoon of sugar

How to Prepare

Line a mini muffin-tin with cupcake liners and set it aside.

Mix peanut butter and sugars together in a bowl.

In a small bowl, add chocolate chunks and butter. Place the bowl in the microwave and heat the chocolate in 15 minute increments until it has melted. Stir the mixture between each increment.

Once the chocolate has melted. Add 1 tablespoon of chocolate to each muffin compartment. Now place the muffin tin in the refrigerator for 30 minutes or until the chocolate has set.

Once the chocolate has set use a small ice cream scooper to create small balls. Place each ball into the muffin tin compartments. After you have done that, poor the remaining chocolate sauce into each liner. I recommend filling the liner to 3/4, so it doesn’t spill.

Now allow the chocolate cups to set in the refrigerator for 3 hours.

Thai Coconut Chicken Soup

Whenever I eat at a Thai restaurant, I love order their chicken soup. I recently decided to try to make Thai Coconut Chicken Soup at home with left over rotisserie chicken. It was really easy to make and taste even better the second day!

Thai Coconut Chicken Soup

Serves 4

Ingredients

2 cups of shredded rotisserie chicken

1 cup of shredded carrots

1 cup of frozen peas

1 diced vidalia onion

1 red bell pepper chopped

1 green bell pepper chopped

1 can of light coconut milk

1 tbsp curry powder

1 tbsp sriracha chili sauce

1 tsp table salt

1 tsp ground cumin

1 tsp ground turmeric

1 tsp black pepper

2 Tbsp olive oil

1 garlic clove

cilantro

Preparation

Heat olive oil in a Dutch oven pot on high heat.

Once the pan is heated add the onion and garlic. When the onion becomes soft, add the carrots, bell peppers and frozen peas. Once the peas are cooked add the salt,pepper curry, cumin, hot sauce, and tumeric powders to the pot. Next, add the coconut milk and the chicken to the pot.

Allow the ingredients in the pan to cook for five minutes on low heat then add the chicken broth. Once you have added all of the ingredients allow the soup to simmer for 20-25 minutes on the stove.

I finally crossed over to team iPhone from team Blackberry at the start of the New Year. I am finally getting adjusted to using the phone but I wanted to get your advice on what apps you recommend I download. I have the Pinterest,Scoutmob and Instagram apps already downloaded on my phone. What are your favorites?

Better known as Joan Clayton on the hit show Girlfriends, Tracee Ellis Ross is now holding her own as a style icon. She is the daughter of the famous singer and fashionista Diana Ross. Tracee recently reappeared on the acting scene with her new show on BET called Reed Between the Lines, which was filmed in Atlanta.

She always looks amazing rather it be walking a red carpet or spotted walking down the street Atlanta or New York. You can tell she has a true sense of style. In a recent interview on Bravo, she talked about her obsession with shoes. She has been in spotted in several photos with amazing and unique high heels. I would love to hang out in her closet one day! She also mentioned in the interview that she shops in her mom’s closet a lot. Lucky Girl! Could you imagine having those hand me downs?

Not only do I love her style, but I also love her hair and makeup. In every picture her hair looks amazing and I bet she never has a bad hair day!
