Many of you don’t know I gave up drinking alcohol about a year ago when I was really sick last summer. I have to say there are times when I do miss a nice cocktail but I do still enjoy making drinks for friends. That doesn’t stop me making drinks for the blog because I still love doing so. My friends are shocked that I gave up alcohol for a whole year because they know how much I love wine. I hope to slowly reintroduce a glass of wine into my life every once in a while sometime later this summer now that I’m back to good health.
I now just stick to water, tea, fresh juice and mocktails. So today I’m sharing one my favorite summer drink recipes for an Agua Fresca. Agua Frescas are light and refreshing drinks found near Mexican food trucks. I first tasted an Agua Fresca at a Mexican restaurant a few years ago. So refreshing! Today I’m using fresh herbs from my garden and in season fruits to mix up this delicious mocktail. I hope you enjoy my Mango Peach Agua Fresca.
- 3 Mangoes, peeled, seeded and diced
- 2 Peaches, peeled and seeded
- 1 cup water
- 1 cup sparkling water
- ¼ cup honey
- 2 tablespoons lime juice
- In a blender, add 2 cups of diced mango, one cup of diced and peeled peaches and 1-cup cold water and blend until smooth. Pour blend through a strainer into a pitcher; discard solids. Repeat with any remaining puree and 1-cup sparkling cold water. You should have about 8 cups juice. Stir in lime juice, honey, and mint. Refrigerate for at least 1 hour before serving. Serve well chilled over ice.
