I’ve heard you can substitute avocado in baking for butter and I was intrigued when I saw a similar recipe to this chocolate avocado mousse in a Paleo cookbook got for Christmas. Throwing a Valentines Day party? This no-bake dessert is a quick and easy recipe that is perfect for serving to your guests at the end of the night. Avocados are always on sale during season at my local grocery store so this recipe if an affordable and healthy dessert that won’t break the bank either.
Chocolate Avocado Pudding
2 ripe avocados
½ cup of original coconut milk
¼ cup of honey
¼ cup of cocoa powder
1 teaspoon vanilla
¼ teaspoon sea salt
In a food processor or blender, add all of the ingredients and blend until very smooth and slightly fluffy, about 1-2 minutes. Additional honey may be added for sweetness. Refrigerate for an hour to chill before serving.
