Mornings are always a struggle for me! I usually hit the snooze button about five times before I actually get up and the next 45 minutes are spent with running around getting ready and barely having time to make breakfast. So this weekend, I made a breakfast casserole to freeze and eat off of for the rest of the week.
Breakfast casseroles are so easy to make.. all you need are refrigerated croissants, turkey sausage, eggs, milk, seasonings, hash browns, and cheese. It’s the perfect recipe for the busy woman on the go like me or to feed a family of four.
Sunrise Breakfast Casserole
7 eggs
1/2 cup non-fat milk
1 bag Simply Potato hash browns
1 can refrigerated croissant dinner rolls
1/2 cup shredded cheese ( your choice)
1 cup red and green bell pepper and onion, chopped
1 cup spinach
1 bag of Jimmy Dean Sausage turkey crumbles
Green onion
salt
pepper
cooking spray
Preparation
Pre-heat oven to 375 degrees. In a medium size mixing bowl, scramble eggs and milk together until fluffy. Season with salt and pepper to taste. Mix in spinach,onion and bell pepper mixture. Add hash browns and 1/4 cup cheese to bowl. Mix everything together. Add more milk if needed.
Now, spray your casserole dish with cooking spray. Next, line the bottom of your dish with the refrigerated croissants rolled out. Add the turkey crumbles to the pan. Finally top it off with the egg mixture and bake for 45 minutes- 1 hour or until the egg has set.
Take it out of the oven and top with the remaining cheese and green onions.
