Hi friends! My name’s Amy and I want to thank Jewel for allowing me to guest blog here today at Eat.Drink.Shop.Love. When we were discussing possible topics, I was thrilled when Jewel asked me to share a cocktail with you. On my personal blog, Your Southern Peach, I post mostly food recipes so creating and photographing this cocktail was a lot of fun for me. I admit, I’ve been testing and sampling this recipe a lot this past week and I’ve enjoyed every sip of it!
I love trying new things and have been experimenting a lot with mangos lately. I wanted to find a way to incorporate this exotic fruit into a refreshing cocktail and immediately I thought of the classic mojito. My mango mojito recipe is a tropical twist on the classic Cuban drink. It’s fun, fresh and perfect for a Spring gathering. So turn up some great tunes, put on a flirty dress and mix up a few of these mango mojitos!
Ingredients
2 limes, juiced (1 oz.)
1 mango, peeled, cubed and pureed (makes about 4 oz. puree)
10 mint leaves
4 oz. Rum
3 oz. Club Soda
Crushed Ice
How to Prepare:
In a small glass, juice two limes. Next, place the mint leaves in the lime juice and gently muddle the leaves to release the mint’s essential oils. (I used the handle of a wooden spoon.) In a small pitcher combine the mango puree with the lime and mint mixture. Add rum and club soda. Mix well and serve over crushed ice. Garnish with mint or lime wedges and enjoy!
Makes about 1 1/2 cups
